This is a simple carrot dish I was told is from Morocco.Serve it as an accompaniment to any roasted meat, fish , or chicken.
1 1/2 lbs. carrots
4 c water
1/8 tsp. ground cinammon
1/8 tsp. ground cardamon
1/8 tsp. ground cumin
- Bring the water to a boil.Meanwhile, wash and peel the carrots and cut them into disks.
- Add ground spices to water.
- When water is boiling ,add salt, then carrots.
- Cook for 20 minutes or until tender.
- Drain then serve immediately.
